Soft pretzel and chocolate ice cream sandwiches

The other day while I was making chocolate ice cream, I decided why not whip up some soft pretzels and turn them into ice cream sandwiches? I know, easier said than done as my pretzel recipe has a three hour prep time, but I knew they’d be delicious so I went for it.

And I was right. The combination of the salty pretzels and the sweet ice cream was incredible. My boyfriend suggested that vanilla ice cream would be good with the pretzels, but I was all about the chocolate. One tip though, I wouldn’t make these ahead of time and store them in the freezer. Since the soft pretzels are a bread, not a cookie, they become hard when frozen and lose a bit of their edge when thawed. They’re best fresh, as is the ice cream.

Ingredients:

Soft pretzels
Ice cream

Directions:

1. Start by making soft pretzels (my recipe here) and either making chocolate ice cream or buying a tub. I prefer to use my homemade ice cream (recipe here) since I can control the sweetness and amount of chocolate.

2. Cut pretzels in half, and spread a thin layer of ice cream on the bottom half. Place the top over the ice cream, and voila, you have yourself a pretzel ice cream sandwich.
