It’s always great to have a bit of green with dinner, but even I get bored of salads every now and then. Endives are leafy vegetables similar to radicchio. They’re high in vitamins A and K, and also a great source of fiber! David and I had a bit of blue cheese lying around from brunch last weekend (we had a cheese plate with bread), so I decided to use them in these bites. Throw on some dates, and a drizzle of balsamic vinaigrette, and you’ve got an instant appetizer!
Ingredients:
1 head of endive
Balsamic vinegar
Agave
Olive oil
Salt
Pepper
Garlic powder
Dates
Blue cheese
1. Whisk up a quick balsamic vinaigrette by combining balsamic vinegar and agave in a bowl or tupperware container. Season with salt, pepper, and garlic powder, then gradually add olive oil while whisking.
2. Remove the pits from a handful of dates, and chop into small pieces.
3. Remove a few leaves of endive, rinse, and pat dry with a paper towel.
4. Arrange a few on a plate, then spread a bit of your balsamic vinaigrette.
5. Sprinkle on a few dates, and a crumble of blue cheese.
I like to pair these with a piece of bread, like my rosemary focaccia, but they’re great on their own!
