I love a good fruit salsa. Just a few weeks ago I did one with pomegranates and pear, but last night for dinner I went with kiwis and mango as a base for my salsa. I also made corn tortilla quesadillas, and jalapeño biscuits to go with the mango kiwi salsa. So delicious.
You could probably make a salsa out of almost any fruit. Next time I think I might try peaches!
1 or 2 kiwis
1/3 a red onion
1/2 a bell pepper
1/2 a jalapeño
Small handful of cilantro
1. There aren’t many steps in making a fruit salsa. Start by dicing your mangos, then kiwis, onions, and bell peppers. Combine them all in a medium bowl.
2. Dice jalapeño into very small pieces, then sprinkle them on top of your other ingredients along with salt, pepper, and garlic powder.
3. Add diced cilantro right before serving. The cilantro will wilt if you let it sit in the salsa, so don’t add it until you are ready to eat.
Enjoy with tortilla chips, or on top of a cheese quesadilla.
