3 ingredient sun dried tomato pesto

I made a batch of Irish soda bread last weekend for Saint Patrick’s Day, and needing something quick to go with it. So I came up with this super simple, 3 ingredient sun dried tomato pesto.

Seriously all you need is a jar of sun dried tomatoes in oil, some kind of nut, and some kind of cheese. I recommend pine nuts and italian cheese, but you could use whatever you want.

This pesto is amazing on a veggie sandwich, great tossed with fresh pasta and roasted vegetables, or perfect on a slice of soda bread.


1 jar sun dried tomatoes in oil
Pine nuts
Italian or parmesan cheese
Salt and pepper (optional)


1. Remove about 2/3 of the tomatoes from the jar and place them in a food processor along with pine nuts, and pinches of both salt and pepper. Set the jar aside, as you’ll need the oil later.

2. Pulse your food processor until they’re broken up into smallish pieces.

3. Add cheese, and about 1/2 to 3/4 of the oil from the jar of sun dried tomatoes.

4. Pulse until you have a chunky pesto. Add olive oil or more salt and pepper if needed. You could also throw in a bit of garlic.

Eat immediately or store in an air tight tupperwear container.
