Raw banana nut crusted chocolate ice cream balls

I love making healthy desserts, and these raw ice cream balls are pretty much as healthy as a bowl full of fruits and nuts. It’s a little tricky forming the balls, and it can be messy too. But, the effort will be well worth it, the ice cream balls are chocolately and make for a great after dinner snack.


1 a banana
15 dates
1/4 c dried coconut flakes
1/4 c cocoa powder
1/4 tsp vanilla
1/4 c agave
1/4 c almonds (divided)
1/8 c sunflower seeds
1/4 tsp kosher salt


1. Combine banana, dates, coconut flakes, cocoa powder, vanilla, agave and 1/8 of a cup of almonds in a food processor. Pulse until smooth.

2. Grind remaining almonds, sunflower seeds, and kosher salt in a bullet blender or spice grinder. Pour into a flat bowl.

3. Spoon balls of your ice cream base into the ground nut and seed powder. Roll batter around and form it into a ball, then place them on a parchment paper lined cookie sheet.

4. Freeze for at least four hours.

Enjoy right out of the freezer, no need to let them thaw.
