This is a simple, but delicious salad that’s great for lunch with a bit of fresh bread of a bowl of soup. The raw lime avocado dressing goes with most salads (and can also be used as a dip for carrot and jicama sticks) but I especially love it with star fruit. Besides the greens and star fruit, you could pretty much add anything you want. I went with shredded carrot, red onions, garbanzo beans, and corn just because I had most of the ingredients in the kitchen already.
Dressing ingredients:
2 limes
1/2 an avocado
3-4 Tbsp olive oil
2-3 Tbsp coconut milk beverage (unsweetened)
1 Tbsp sunflower oil
Salad ingredients:
Star fruit
Spinach
Arugula
Mixed greens
Carrot
Red onion
Garbanzo beans
Corn kernels
Directions:
1. Combine the zest of 1 lime, along with the juice of 2 limes, 1/2 an avocado, olive oil, sunflower oil, and coconut milk in a bullet blender. Run until smooth. Season with salt and pepper.
2. Prep star fruit by cutting off the ends and brown edges of star points, then slicing into pieces for your salad.
3. Dress greens then add onions, shredded carrots, beans, corn, and star fruit slices.
