My favorite mint berry smoothie

I could eat a smoothie every day, well I pretty much do. So does my boyfriend David. He has a dedicated smoothie routine though, and enjoys the same combination of fruit every day.

I, on the other hand, like to be adventurous! I like to try new flavors in my smoothies, and one of my recent favorite ingredients is fresh mint. Just throw it in with your fruit and it gives the smoothie a delicious cool flavor. My other big tip is to use a combination of frozen and fresh fruit. Ice cubes don’t add anything to a smoothie in my opinion, frozen fruit all the way.

I’m all about freezing my own fruit too. Especially when it comes to mangos, store bough frozen mangos are always peeled. There are a ton of nutrients in mango skins, so always buy whole mangos and freeze chunks on your own.

Frozen mangos
Unsweetened coconut milk
Lime juice

1. Add frozen mango, mint, and blackberries to a blender.

2. Pour coconut milk about 3/4 of the way up. Then add lime juice till full.

3. Blend until smooth.

Serve with a few fresh mint leaves.
