Roasted pineapple and watercress salad, with a passion fruit vinaigrette

This is a fancy looking salad, that tastes even better than it looks! The grilled pineapple has a deep flavor, and the fresh passionfruit vinaigrette adds a great citrus kick.

The salad makes for a great appetizer during a multi course dinner, or a delicious brunch side. I like plating them individually, but you could easily slice the pineapple into chunks and make a large salad.

Ingredients:

Pineapple rings
Blueberries
Passionfruit
Watercress
Agave
Olive oil
Kosher salt
Sesame seeds

Directions:

1. Cut a passionfruit in half. Scoop the seeds out into a mesh strainer over a bowl. Mash up the seeds with your hands to squeeze as much juice out as possible.

2. Add a bit of agave and kosher salt. Whisk, then gradually add a few tablespoons of olive oil. Taste, and season with extra salt as needed. Let rest in the fridge.

3. Place pineapple rings on a parchment paper lined tray, roast for 30 minutes at 300 degrees fahrenheit. Flip, then roast for another 30 to 45 minutes.

4. Gently wash watercress leaves and pat dry individually with a paper towel. Toss with passionfruit vinaigrette in a small bowl.

5. Place a ring of pineapple down on the plate, then put a few blueberries in the center.

6. Top the fruit with dressed watercress then sprinkle with sesame seeds.
